50% Mozzarella 50 % Analogue or 70% Mozzarella 30% Cheddar
Pizza Blend is a mixture of Mozzarella and Analogue cheese, either 50/50; 70/30; 80/20.
Analogue is a non dairy “substitute” for mozzarella, and todays modern versions, when mixed into Mozzarella are indistinguishable from pure mozzarella.
The main advantage here is cost saving: the product can be as much as 10% cheaper than pure mozzarella. However it is important to stress that it contains non dairy ingredients and should be described on a menu as pizza blend, mix or whatever: the word cheese cannot be used to describe it
