Grated to produce a product which is easy to use and packaged in either 1kg or 2kg bags.
Cheddar can be available at all sorts of prices in the market: if the price is low, then the cheddar will have been grated from “offcuts”, the pieces left behind after a retail pack has been cut. This product can be identified by irregular grate lengths, varying flavour from bag to bag, and “finings”: small pieces of cheese in the bag.
Better quality cheddar (what Kingdom predominantly use) is grated directly from block sourced on a regular basis from the same supply. This which makes for a regular flavour profile and even shred length.
